Mother used to make fantastic breakfasts which i have continued to do. One that I have not tried but always found tasty was calf brains and scrambled eggs. Creamed chipped beef on toast was delicious. Grits with butter was usually served with eggs, bacon, etc.
One of her favorites was fried fish roe, always with grits. and yes, she made very tasty fried green tomatoes, again with grits.
