Jerusalem Artichoke Relish

A staple at 87 W, Wesley was Jerusalem artichoke relish. My mother would make a batch of J. A pickles and relish every year. She gave away some as gifts but we ate most of it. I loved both but particularly the relish which i continued to make most years after she stopped making it.


Here is the recipe:


Ingredients::

5# Jerusalem artichokes (often called sunchokes in stores)

4 large onions - cut into small pieces

1 red bell pepper - cut into small pieces

1 green bell pepper - cut into small pieces

4 hot peppers - cut into small pieces

3 pints Apple sider vinegar

1 T tumeric* (the magic ingredient)

2 T celery seed*

4 T salt*

1/4 t cayenne* (to taste)

2T mustard*

2 cups sugar*


Mix all * into vinegar and heat to simmer

Add artichokes, onions, pepper and bring to simmer

Pour into pint canning jars (approximately 10 total)/ add sealed tops and put aside to cool.

Do not put too much juice into any jar so there is enough left for final jar

Vary the recipe according to your taste with more or less hot peppers, etc.
