Recipes

I am something of a foodie, but not necessarily fancy food. I also learned a bit about cooking over the years, with a focus on breakfast. Here are some of my favorites, with a strong emphasis on convenience:


Scrambled Eggs in a Coffee  Cup -

Somewhere I learned to scramble 2 eggs in a coffee cup in the microwave: 

  1. Mix 2 eggs with a TB of 1/2&1/2 in a coffee cup.

  2. Heat on high for 30 secs.

  3. Mix again & return to microwave & watch as the mixture swells.

  4. When still wet on top, remove, mix in cooked bacon bits (see below) & shredded sharp cheddar cheese.

  5. Hot sauce to taste.

  6. Eat with spoon to get all the scrapings!


Easy Poached Eggs-

  1. Boil water in a full small saucepan & remove from heat.

  2. While water is boiling, break 2 eggs into strainer & drain.

  3. Ease eggs into hot water

  4. When cooked to your taste, remove with slotted spoon and put on hot buttered toast or fried canned corned beef hash.


Jimmy Dean’s Frozen Sausage  Biscuits:

  1. Remove 1 or 2 sausage biscuits from freezer. 

  2. Heat sausages on plate in microwave. This warms plate.

  3. Toast biscuit halves in toaster & put on sausage plate.

  4. Put sausage(s) on biscuit half.

  5. Spread apricot (or jam of choice) on other biscuit half(s).

  6. I generally serve one sausage biscuit as above with a Jimmy Dean Biscuit Rollup.


Swedish Pancakes:

  1. Mix Lund’s Swedish Pancake Mix as directed.

  2. Cook on hot griddle in a little butter - I am Moore successful doing small pancakes

  3. Serve fresh hot on warm plates with a warm microwaved mix of butter & maple syrup, lingonberry or other jam.


Fried Eggs Edna (Trish’s mom):

  1. Fry egg(s) in a not-too-hot buttered pan.

  2. Instead of turning egg(s) over, put a splash of water in pan and cover with a plate.

  3. Remove egg(s) when top is sufficiently cooked.


Egg Bytes & grits:

  1. Purchase Egg Bytes or equivalent.

  2. Warm in microwave as directed.

  3. Heat individual package of pre-cooked grits in water.

  4. Add butter & serve with eggs. 

  5. A bit of Cholula sauce can improve either.


Fried Egg Sandwich:

  1. Fry egg as above, using Edna style & keeping yolk partially runny.

  2. Toast favorite rebuttered bread: (Swedish Coffee Bread is great)

  3. Put egg on one slice of toast.

  4. Add sauce (catsup in my case) of choice, if any.

  5. Eat open or closed.

  6. I use second slice for apricot jam.


Oatmeal with bacon bits: 

  1. Cook ready oatmeal - I prefer skim milk to water.

  2. Warm bacon bits in microwave - between 2 plates (to limit mess).

  3. Add warm bacon bits to oatmeal & enjoy.


Favorite Dinners:


Scalloped Oysters: 

At least a dozen oysters & liquor

Saltine crackers

Worcestershire sauce

Butter:

Heavy cream

Salt & pepper

Bacon bits?



Layer of crushed saltines

Layer of oysters, whole or cut up



Salad: 

Vine ripened tomatoes sliced 

Butter lettuce

Artichoke hearts

Heart of be Palms

Vinaigrette

With French bread & butter - fresh or toasted


Fresh tomato sandwich on white bread with good mayo, NO lettuce!
